<p>「<strong>國王派</strong>是一款能帶來無窮歡樂的甜點，」<strong>甜點師傅Ben</strong>笑著說：「它的魅力不只是來自酥皮與杏仁奶油餡的完美結合，更來自那個藏在餡料裡的象徵幸運的小瓷偶（la fève）。」<br>這款甜點的起源可追溯至法國，每逢三王節 (Epiphany)，家庭成員會將它分成數片，誰吃到藏有小瓷偶的那片，誰就會被加冕為當日的「國王」或「王后」，戴上象徵榮譽的紙皇冠。</p>

<p><strong>Ben</strong>解釋道，製作<strong>國王派 (Galette des Rois)</strong>最講究的便是酥皮的製作工藝:「要讓每一層酥皮都完美地起酥，口感酥脆，外層還要呈現金黃色澤，是非常有挑戰性的。」還有最外層的割花，都必需精準穩定，才能達到完美的效果。</p>

<p><strong>咕咕霍夫(Kouglof)</strong>的製作以發酵麵團為基礎，內含蘭姆酒浸漬的葡萄乾與香料，帶來濃郁的香氣。<br>「<strong>咕咕霍夫</strong>的口感介於麵包和蛋糕之間，」<strong>Ben</strong>說:「此次店裡要銷售的是<strong>和風抹茶皇冠布里歐(Brioche)</strong>，而布里歐(Brioche)和咕咕霍夫(Kouglof)，使用的剛好是同樣一種發酵麵糰。」</p>
